Jamie Oliver's Turkey

This year we spent Christmas Day with my husband's family. I had the exciting chance to influence dinner a little bit. I had been wanting to try Jamie Oliver's turkey with the Christmas butter ever since I saw it on TV. It was really easy to do and made the turkey look amazing. The herbs were hard to find right before Christmas - so buy ahead of time!!

I didn't know what to expect from the butter. I used a full cup with 75 grams of chopped dried cranberries, rosemary, thyme and sage. I really liked it! I was thinking that when the turkey was carved there would be bits of dried fruit everywhere - but it wasn't like that at all. everything was melted together in deliciousness! I believe this recipe would be great altered a bit for a chicken!

Then I pushed my way under the skin up as far as I could go. Gave that bird a little massage and sent it on it's way!! I put some extra herbs in the cavity as well. Don't forget to salt and pepper liberally in both the cavity and the outside!
