I do not know why, but I believe that this is the most vital part of the cookie. The recipe calls for 1 1/4 cup cooking oats that are blended for approx 15 seconds. Please do not skip this step and just put the oats in whole. While I am sure the cookie would bake just fine - I think this could be the secret for the great taste they have.
The recipe calls for chocolate chips and grated chocolate but today I used the last of the Halloween candy (we eat the smarties last) and half a bag of pecans I had in the cupboard. These cookies should be called "Anything but the Kitchen Sink" because any combination of candy or chocolate chip would be marvelous in the simple base. It truly is versatile!
A simple yet extremely tasty cookie!! Be sure to remember to use parchment paper on your baking sheets if you are using a candy coated cookie! It will help them from melting and sticking to the sheet!
