Potatoes

Everyday I struggle with dinner. What to make. Do I have the ingredients. Do I have enough time. I should have planned better. Blah blah blah. So on this day, it wasn't much different - except I knew I wanted potatoes.

Well a potato isn't very exciting - so I had to think of something yummy to do with it. I had been talking to my Aunty Rachel a few days previously and she mentioned that she was making twice baked potatoes. So.... here we go.




I didn't have a recipe but as my Aunt put it "I don't see what the big deal is, but if you make them everyone thinks they are something else". So this isn't rocket science, just a really good idea. A way to perhaps make a plain Jane dinner a little bit fancy! I just pulled everything out of the fridge and pantry that I knew went with potatoes.

After cleaning, I put a little bit of olive oil them and sprinkled them with some salt and pepper. I roasted them in the oven for about 45 min. Then after they had cooled bit, I scooped out the centers and added in no particular order or measurement: sour cream, bacon, cheese, milk, lemon dilly dip (Epicure), and 3 onion dip (Epicure). I stuffed the potatoes with the filling and topped with more cheese. Another 25 min or so in the oven while the chicken finished and.....
