The NOT so "Ultimate" Peanut Butter Cookie
I am in love with peanut butter. Seriously. Peanut butter and anything - bread, banana, celery, cookies, chocolate (especially chocolate) and yes even Bacon!!! That's right, if you have never toasted yourself up a peanut butter and bacon sandwich you have yet to live a full and happy life. Don't knock it until you try it. Anyway, that recipe is a whole other blog....
Okay, so back to my love. I had been craving peanut butter and chocolate chip cookies for awhile now. So after a few days, I finally broke down and made them.
I found a recipe by Anna Olsen and decided to whip up a batch. You can get her recipe here. I threw in some chocolate chips and some peanuts (just cause I had a quarter bag hanging around from x-mas baking).
Anna had a great idea and instead of using fork tongs to push down the cookie she used what I would assume was a shallow cookie cutter. It left a lovely impression of a flower/sun object on her cookies. I decided I too could recreate this beauty and picked out a cute puppy and alligator to press into my cookies. But then something very funny happened... I couldn't do it. I think the best part of eating a home made peanut butter cookie is seeing the impressions the fork made on top. I mean really, no other cookie has such a descriptive appearance that you know exactly what you're biting into. I decided that it was the lines from the fork I wanted just as much as the cookie. Cheesy - I know, but it's my blog!!!!
Anyway, these particular cookies were really really sweet. Perhaps because I used dark brown sugar or perhaps because they just had too much sugar in them?? They also could have used some more peanut butter taste. Perhaps substitute PB for the regular butter?
Nonetheless, these cookies did not stick around for long but they did leave me on the hunt for the TRUE "Ultimate" Peanut Butter Cookie, and stay tuned because I have a new recipe coming mind......
