The recipe calls for raw sugar too. It was quite pricey to buy, but I wanted to give it a shot. I don't know how much difference the sugar would really make to the cake. I am sure regular white or brown sugar would be just fine!
Did I love this cake??? Probably a no. I loved the texture of it! I loved how moist it was! I was intrigued by the licorice taste of the fennel and the cardamon, but honestly - I would have preferred this cake with some cinnamon and espresso instead!! It is a nice fast recipe though and I think it makes a perfect chocolate cake! I will probably use it again in that capacity!
