Oatmeal Cake

Friends of mine just recently had their baby! After many many days in hospital prior to the birth I decided to bring them a little something to snack on. Along with the Pumpkin muffins I decided to make an Oatmeal Cake. I had never done so before, but it looked tasty and I decided it would be filling enough to make a decent snack in a place where the food stinks!

So, Oatmeal Cake starts with a big bowl of Oatmeal!!



All the ingredients lined up and ready to be mixed!


You mix the above together and then bake for approximately 25 minutes. Then stir all the deliciousness together in a pot and pour over top - bake for an additional 7 minutes!




The cake was a huge hit! It really was amazingly good. A nice surprise considering it starts with oatmeal! The topping is just like candy! I will be mixing this up soon I am sure - baby or no baby!


Oatmeal Cake


1 cup Rolled oats (not instant - I used quick oats)

1 cup Boiling water

2 Large eggs

1 cup Granulated sugar

1/2 cup Cooking oil

1 tsp Vanilla

1 1/3 cups All-purpose flour

1 1/2 tsp Baking soda

1 tsp Ground cinnamon

1/2 tsp Salt


TOPPING

1/4 cup Hard margarine or butter

2/3 cup Brown sugar, packed

2 tbsp Half and half cream (or milk)

1/2 cup Chopped pecans (or walnuts)

1/2 cup Medium coconut

Measure rolled oats into small bowl. Pour boiling water over top. Stir. Let stand, uncovered until cooked.

Beat eggs in large bowl until frothy. Add sugar. Beat. Add cooking oil and vanilla. Beat until well combined.

Combine flour, baking soda, cinnamon and salt in separate small bowl. Add flour mixture to egg mixture in 3 additions, alternating with oatmeal mixture in 2 additions beginning and ending with flour mixture. Turn into greased 9 x9 inch pan. Spread evenly. Bake in 350 degree F oven for about 30 minutes until wooden pick inserted in centre comes out clean.

Topping: Mix all 5 ingredients in small saucepan. Heat and stir on medium-low until margarine is melted and brown sugar is dissolved. Do not boil. Spread over cake. Bake for 5 to 7 minutes until top bubbles all over. Cuts into 16 pieces.
