Lemon Autumn Cake AKA HEAVEN

Okay, a true confession. A cake from a mix, and yes I am blogging it because you need to make it. And then eat it. 95% of the baked goods that come out of my oven are made from scratch. I rarely make anything from a mix. However, my Mom made this cake one night and I can't get enough of it. I am not a fan of lemon, but this is amazing! I do plan on trying it with white cake and banana pudding one day too..... the options are endless really!!!

Okay, couldn't be easier. Buy a yellow cake mix. Make the cake according to the directions. Put in a 9 x 13 pan - which I don't have (I use 8 x 11 and increase baking time by about 10 min).


Make the lemon pudding according to this recipe. Then pour it over top of the cake. Fun right?



Be sure to put your cake on a baking sheet as the pudding will bubble over and make a mess!




The recipe calls for some icing sugar to be sprinkled over the top of the cake before serving. I figure what is the point? Now what you see in this picture is true - a fallen cake. In my defense, my 2 year old came whipping around the corner into the kitchen when I had the oven door open. So I slammed it shut and risked a fallen cake over the alternative. Needless to say, I knew the cake would taste delicious no matter what and my 8 (welcome Barb) followers on here would forgive me.
You end up with a perfect cake on top with saucy pudding on the bottom! Be sure to serve warm or reheat in the microwave if you are eating it the next day (that is if anything is left over) Yum Yum.



Lemon Autumn Cake

1 pkg yellow cake mix

2 pkg jello-O lemon instant pudding

1/3 cup sugar

2 cups cold milk

1 1/4 cups water

2 tbsp icing sugar (optional)

Preheat oven to 350 degrees. Prepare cake as directed on package; pour into greased 9 x 13 pan.

Beat dry pudding mixes with sugar, milk and water with whisk for 2 minutes. Pour over cake batter. Place baking dish on baking sheet to catch any sauce that may bubble over.

Bake approximately 1 hour. Be sure to check centre of cake with toothpick or knife. Cool 20 min so sauce can thicken. Sprinkle with icing sugar; serve warm.
