Tahitian Beef


My husband turned 30 this year and for dinner I relented and made his favorite childhood dish. It is really easy to make but takes awhile. You need to simmer the beef for at least an hour, and I used brown rice which takes an hour as well. Definitely not a quick weeknight meal. I find this dish actually quite acidic but really tasty - maybe less vinegar or something... Anyway, I hope you try it one night.

Tahitian Beef
1 1/2 lbs lean beef, cut in small strips or 1 1/2 lbs braising ribs.
salt and pepper
oil
1/4 cup water
1 - 19 oz can pineapple chunks
1/4 cup brown sugar
2 tbsp. cornstarch
1/4 cup vinegar
1 tbsp soya sauce
1/2 tsp salt
3/4 cup green pepper strips.

Season beef with salt and pepper and brown slowly in hot fat. Add water. Cover and simmer until tender - 1 hour. If braising ribs are used, drain off excess fat. Drain pineapple in separate saucepan. Mix sugar and cornstarch. Add pineapple juice, vinegar, soya sauce and salt. Cook and stir over low heat until thick. Pour over hot beef. Let simmer 15 minutes. Add pineapple and green pepper only 2 - 3 minutes before serving.

I serve over rice!
