Chicken Mac & Cheese

Cheesy Pasta (as my 3 year old calls it) is a common dish found on my table. It is one of those things I will whip up when I don't feel like cooking but want something yummy and warm. I also like it because it makes lots of leftovers - and makes my 3 year old VERY happy! I have recently started using shaped pasta (wheels, mickey mouse) and he devours at least 2 servings!

I saw this recipe in my new magazine and it looked so grown up and restaurant like! It has tomato paste in it - which I would normally not entertain in a mac & cheese, but this really is more like a rose sauce with cheese. Delicious. I would have to call it my new fave!!


I used half a blend of mozza and chedder and half just chedder. I didn't bake this for as long as the recipe called for. I just popped it in a 400 F oven for 8 min and then under the broiler. I like my pasta a bit saucy so I didn't want it to be all soaked up. I also did the breadcrumbs - but I think I would use less next time.

All in all, it was great!
