Slow Cooker Beef Dip

I have seen a few of these recipes floating around several blogs. Beef dip is one of my favorite meals. My parents do this dish quite often for family dinners during the BBQ season. And like many recipes, once I see them - I can't stop thinking about them until I finally get the chance to cook them myself.

I have some out of town company (and so does my sister) so we decided to all get together for dinner. We served Beef Dip and Roasted Chicken. Both were fantastic, but onto the beef...

A small secret for you all. I never knew this and was thrilled to be let in on it. There is a butcher shop (right around the corner from my house) and you can buy "bacon ends" from them for cheap cheap cheap!! Go to your local butchers or meat shop and ask them if they sell their sliced bacon ends at a discounted price. When they are slicing the bacon and it starts to be irregular in shape, or short, or only small pieces - they bag those up and sell them. I bought 1.47 lbs of bacon for $3.37!! It is always $5 or more to buy only ONE pound in the grocery store!! So, if you don't care if your bacon is in perfect looking strips or not - this will save you so much. Okay, enough about bacon, onto the beef...

After rendering about the equivalent of 4 strips of bacon, I removed them from the pan into the slow cooker and drained most of the fat. Then I took my well seasoned roast and seared it on all sides. Get a nice brown crust on there, flavor flavor flavor.

Add the beef to the slow cooker along with the rest of the ingredients. Cook away... hours hours and hours...

With only an hour left to go before dinner, I pulled the roast out and broke it up (with a fork!). Shred Shred Shred. Add the shredded meat back to the juices to (you guessed it) simmer simmer simmer.

Okay no idea what is with repeating the words 3 times over... maybe it was just because I really want you all to try try try this.... okay....


Please add some cheese to these sandwiches.... they are sooo delicious!! An easy meal with the juice all ready for you. I did find the recipe on the most part perfect - but it was lacking that WOW factor right at the end of the bite. So, perhaps next time I will try a dash or splash of this or that and see where I can improve it!! Don't forget to season your meat and then again the juice you are making!

On this night I was cooking 2 main dishes for 9 people. Had it just been my small family eating the beef dip I would have used my garlic bread seasoning and butter then broiled those buns before placing the meat on top. That would be amazing.

Slow Cooker Beef Dip

3 - 4 lb roast beef
4 strips of bacon
3 cups of water
1 cup red wine
2 beef bouillon cubes
1 pack dry onion soup mix
1 tsp garlic powder
salt and pepper

1. Slice bacon in small pieces and render away fat. Put cooked bacon in slow cooker and drain fat.
2. Season beef well and sear on all sides to form a nice crust.
3. Place beef and remaining ingredients into a slow cooker.
4. Cook for at least a total of 6 hours.
5. With one hour left to go, take beef out and shred. Put meat back into the juices in the slow cooker.
6. Serve meat on buns. Ladle juice into small dishes and serve with sandwiches.
